Yes, that should work fine. What happens with USB connections is that they look like serial connections and the protocol stays the same. The Lynxmotion SSC module should work just fine with this.
The same goes for the Parallax servo controllers, they have all moved to USB but the protocols are the same. Pololu also has some nice ones (Maestro).
If you are having issues with these newer versions, let us know. There were and still are many other servo controller solutions other than using an Arduino.
