Yes, if you have a look at the green ball object tracking that might the best Machine Vision 101 talk that the students could perform.
Color is not the most reliable detection method to use but it certainly is the easiest to understand and can work very well under controlled environments. Thus I'd recommend just having the robot twist and turn towards a desired color and perhaps move forward/backward depending on the area of the detected color blob. We will normally demo that for folks that may not be very familiar with machine vision.
